Shun Classic 2.5-Inch Bird's Beak Knife uses a short, curved bird’s-beak blade for peeling rounded produce and making close trimming cuts. Its hooked tip follows small curves more naturally than a long, straight board knife.

At a glance

  • Curved peeling profile

The inward-curving edge is intended for controlled peeling and shaping of fruit or vegetables, not broad board work.

  • 2.5-inch blade

This 2.5-inch format helps define the working reach. Match it to your usual ingredients and leave room for the cutting stroke.

  • Patterned blade

Layered Damascus cladding gives the blade its flowing pattern.

  • D-shaped Pakkawood

The resin-treated wood handle has a D-shaped cross-section, a distinctive feature of the Classic family.

Find your fit

This is a companion to a larger board knife. Choose it for careful detail work; use a longer blade when the ingredient is too wide to cut in one controlled stroke. Read our petty and paring knife guide for practical comparisons.

Care and storage

Wash by hand with mild detergent, then towel-dry the blade and handle before putting the knife away. Keep the edge protected in a suitable block, tray or guard. See our knife-care guide for a practical routine.
