Shun Kanso 9-Inch Bread Knife is designed for cutting through bread crusts with a controlled back-and-forth motion. The serrated edge is useful for dividing loaves and rolls while letting the blade travel through the cut rather than pressing down on the crumb.

At a glance

  • Serrated bread edge

The teeth start the cut in a firm crust; light strokes help control the slice through the softer center.

  • 9-inch blade

This 9-inch format helps define the working reach. Match it to your usual ingredients and leave room for the cutting stroke.

  • AUS10A stainless steel

Kanso uses a solid stainless blade with a muted, stonewashed finish.

  • Tagayasan wood

The riveted natural-wood handle sits over a full tang and has a different character from resin-treated Pakkawood.

Find your fit

Choose enough blade length to extend beyond the loaf on each stroke. Use a stable board and guide slice thickness with your supporting hand kept clear of the edge. Read our bread knife guide for practical comparisons.

Care and storage

Wash by hand with mild detergent, then towel-dry the blade and handle before putting the knife away. Keep the edge protected in a suitable block, tray or guard. Have serrations maintained with a method suited to their shape. See our knife-care guide for a practical routine.
